Egusi soup is rich and bursting with flavors, consisting of onions, hot chili peppers, crayfish, different meat cuts and palm oil. It is traditionally thickened with flour that is made from seeds of pumpkins. The broth is typically seasoned with salt, crayfish, prawn powder and cayenne pepper, then thickened with ground egusi. After the soup develops a smooth consistency, vegetables is added to it, it is then usually served with fufu or steamed rice.
